Mace-Cardamom Powder:
Mace 1 TBSP.
Small Cardamom 10-15

Saffron Milk:
Warm Milk 3 TBSP.
Saffron/Orange Colour 1/4 TSP.

Masala Milk:
Warm Milk 400 mL
Ghee 2-3 TSP.
Kewra Water 1 TBSP.
Mace-Cardamom Powder 1&1/2 TBSP.

Mutton Yakni:
Mutton 1 KG; cleaned
Fried Onion Half portion
Yogurt 200 gms.
Kewra Water 1 TBSP.
Ginger-garlic paste 2&1/2 TBSP.
Mace 1/2 TSP.
Bayleaf 3
Star Anise 2
Cinnamon 2-3
Small Cardamom 10-12
Big Cardamom 3
Fennel Seeds 1 TSP.
Black Pepper 1/2 TSP.
Cumin Seeds 1 TSP.
Cloves 6-8
Nutmeg 1; broken into small pieces
Red Chilli Powder 1&1/2 TBSP.
Turmeric Powder 1/4 TSP.
Salt As per taste
Water 750 mL to 1L
Ghee 2 TBSP.

Biryani Rice:
Basmati Rice 1 KG
Lemon Juice 3 TBSP.
Melted Ghee 2-3 TBSP.
Mace-Cardamom Powder 1/2 TSP.
Mace 1/2 TSP.
Bayleaf 3
Star Anise 2
Cinnamon 2-3
Small Cardamom 10-12
Big Cardamom 3
Fennel Seeds 1 TSP.
Black Pepper 1/2 TSP.
Cumin Seeds 1 TSP.
Cloves 6-8
Nutmeg 1; broken into small pieces
Stone flower 1&1/2 TSP.
